
Sharing a Mexican street corn dip that makes for the perfect party appetizer. I’m making it for the Super Bowl this Sunday and it’s always a crowd pleaser with my family. Ingredients:
- 1 cup mayo
- 1 Tbsp chili powder
- 1/2 cup parmesan cheese
- 1 cup shredded pepper jack cheese
- 1 lime, zested & juiced
- 2 cans or 1 small bag frozen roasted corn
- 1 jalapeño, diced
- 1/2 small red onion, diced
- chips, veggies, whatever you’d like to dip in it!
Instructions:
Combine all ingredients and bake at 350 degrees for about 20 minutes or until bubbly.

Ingredients
- 1 cup mayonaise
- 1 tbsp chili powder
- 1/2 cup grated parmesan cheese
- 1 cup shredded pepper jack cheese
- 1 lime, zested and juiced
- 2 cans roasted corn or 1 bag frozen corn
- 1 jalapeno, diced
- 1/2 small red onion, diced
- chips or veggies for dipping, I prefer tostitos scoops
Instructions
- Preheat oven to 350 degrees
- Combine all ingredients and bake for about 20 minutes or until bubbly
