Recipe: Mexican Street Corn Dip, Super Bowl Appetizer

Sharing a Mexican street corn dip that makes for the perfect party appetizer. I’m making it for the Super Bowl this Sunday and it’s always a crowd pleaser with my family. Ingredients:

  • 1 cup mayo
  • 1 Tbsp chili powder
  • 1/2 cup parmesan cheese
  • 1 cup shredded pepper jack cheese
  • 1 lime, zested & juiced
  • 2 cans or 1 small bag frozen roasted corn
  • 1 jalapeño, diced
  • 1/2 small red onion, diced
  • chips, veggies, whatever you’d like to dip in it!

Instructions:

Combine all ingredients and bake at 350 degrees for about 20 minutes or until bubbly.

Ingredients
  

  • 1 cup mayonaise
  • 1 tbsp chili powder
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded pepper jack cheese
  • 1 lime, zested and juiced
  • 2 cans roasted corn or 1 bag frozen corn
  • 1 jalapeno, diced
  • 1/2 small red onion, diced
  • chips or veggies for dipping, I prefer tostitos scoops

Instructions
 

  • Preheat oven to 350 degrees
  • Combine all ingredients and bake for about 20 minutes or until bubbly
